Using voice recognition software 100% of the time is definitely realistic, just make sure you learn how to dictate correctly (there are several web pages with tips, the one I remember is http://www.out-loud.com/best_tips__whatever_the_program.html).
I program using DragonDictate, I'm not sure NaturallySpeaking will work well for programming.

In my opinion, programming by voice is quite difficult, and it would be too
much to learn voice recognition and programming at the same time. You'd be
better off taking a non-programming course initially.
Using voice 100% of the time can be realistic if you use suitable hands
free tools (e.g., Dragon Naturally Speaking + Dragon Dictate, or D/NS Deluxe).
